Intensely flavoured buckwheat nectar – sometimes dubbed the “European Manuka” – is gently creamed for 72 h, softening raw crystals into a velvet-smooth spread. The result is a specialty honey prized for robust nutrition yet refined enough for British taste buds. Flavour opens with caramel, moves through malt, and finishes with a hint of toffee – all without the sharp punch typical of raw buckwheat.
How to enjoy – drizzle over blue cheese or warm porridge – stir a spoon into strong black tea – brush onto roasted root veg for a glossy, savoury-sweet glaze.
