Mead

Because I have a very keen interest in not wasting anything my bees produce it will come as no surprise to you that I want to learn about making the drink known as mead, from the honey I have left over following the uncapping of the honey frames.

Mead is an alcoholic beverage made by fermenting honey mixed with water, and sometimes has added ingredients such as fruits, spices, grains, or hops. Encyclopedia Britannica confirms mead is widely thought to be one of the oldest alcoholic beverages, with evidence for the consumption of a fermented beverage made of honey, rice, and fruit dating to the 7th millennium BCE in China

Like other beverages there are many different versions. The term "metheglin" refers only to spiced mead, made with the addition of spices and herbs such as cloves, ginger, rosemary, hyssop, and thyme; often, however, the terms are interchanged

Mead can be light or rich, sweet or dry, or even sparkling. In the Middle Ages, it was usually similar to sparkling table wine.

I have just started at the tail end of 2023 'having a go' at making some. Early days and as we go into 2024 I will start working on a number of recipes.
